Ingredients (1 serving)
(A) Base Ingredients
Cold noodles (buckwheat or wheat noodles): 200g
Beef shank: 150g
Egg: 1
Tomato: 1
Cucumber: ½
Kimchi: 50g
(B) Seasonings & Sauce
Yinghok cold noodle sauce: 50g
Ice water: 350g
white and black sesame seeds:as needed(for garnish)
Salt, light soy sauce, star anise, bay leaves, green onions, ginger slices (for braising beef shank)
Instructions
A.Braising Beef Shank
Wash beef shank, place in cold water pot with green onions, ginger, star anise, bay leaves. Boil high, skim foam, add salt & soy sauce. Simmer low 1.5–2 hrs till tender. Cool & slice thin.
B.Preparing Side Dishes
Egg: cold water pot, boil 6–7 min after water boils. Cool in ice water, peel & halve.
Tomato: slice. Cucumber: shred. Kimchi: dice. Set aside.
C.Cooking Cold Noodles
Boil water, cook noodles 3–5 min (no hard core per package). Rinse cold, drain.
D.Preparing Cold Noodle Soup
Mix 350g ice water + 50g Yinghok cold noodle sauce in bowl for base.
E.Assembling the Cold Noodles
1.Large bowl: noodles, then beef, tomato, cucumber, kimchi, egg halves.
2.Pour soup to submerge most ingredients.
Garnish with sesame seeds.
